1 Head of Cauliflower
2 Garlic Cloves
Salt and Pepper to taste
Fill a large pot with about 1 ½ inches of water on the bottom. Cut the cauliflower into florets and place into pot along with two peeled garlic cloves. Place on stove and bring water to a simmer. Cook cauliflower until soft and fork pierces it easily. Place cooked cauliflower and garlic cloves into food processor and process until smooth. May need to add extra water or nut milk to smooth it out. Add salt and pepper to taste.
Works perfectly to replace mashed potatoes with any dish.
